Spicy Hot-Oil Seared Hand-Ripped Noodles

A Xi’an classic, meant to be slurped sitting at stalls in the streets of Xi’an. Our chewy hand-ripped biang-biang noodles and heaps of aromatics and chili powder are flash-seared with smoking hot vegetable oil, then tossed to perfection in our house noodle sauce of soy sauce and black rice vinegar.
